ANCHOVIES OF CANTABRICO WITH OLIVE OIL
The anchovies of Cantabrico from Cru Caviar are the result of the selection of the best fillets preserved in olive oil. Caught using an eco-sustainable method in spring, when the temperature is mild and the climate is ideal to ensure natural ripening, CRU anchovies have been handcrafted since the 1960s by “fileteras", who expertly select and cut each fillet manually. The light salting and slow ripening process give our anchovies a soft texture, a sweet and intense flavor and the typical pinkish brown color, characteristics that have made them one of the most renowned gastronomic specialties on the Spanish coast.
