LA CAMPOFILONE
CAMPOFILONE IGP MACCHERONCINI
Campofilone IGP Maccheroncini are the typical product of the village of the same name in the Marche region: they are very fine egg noodles that can be cooked in the sauce, with an absolutely high yield and great absorption capacity.
The history of the delicious Maccheroncini di Campofilone PGI has ancient origins. The best-known episode is linked to the Council of Trent in 1560, during which a dish made of very thin strands of dough made from flour and eggs, from Campofilone, was offered.
This was the pasta that was usually used by farming families in the village of Campofilone, when they needed to preserve the large quantities of eggs produced by backyard hens. The eggs were then kneaded to make the sheet which was dried and stored throughout the year.
